This makes a yummy and healthy snack bread.
Preheat the oven to 350 degrees.
Mix the dry ingredients in a large bowl. (A flatter bowl works best.)
Push the dry ingredients to the sides of the bowl. Add the wet ingredients in the middle. (This minimizes contact with the leavening and xanthan gum until stirring).
Mix. Bake for 27 minutes in small loaf pans.
