bread machine brownie

Our double chocolate brownie biscotti recipe makes an amazing cookie. But sometimes during the summer I want something chocolatey and brownie-ish that can be cooked without turning on the oven and heating up the house.

So here is a nice recipe to make a bread machine brownie.

Set aside the bread machine paddle. We will need to mix this recipe by hand.

Oil the bread machine pan! We are making a brownie, after all. If you neglect to oil the pan you will work much harder at the end to get out the baked brownie.

In the bread machine pan combine:

• 1 cup white sugar
• 1/2 cups chopped nuts (we use walnuts or hazelnuts)
• 1/4 cup chocolate chips
• 1/4 cup teff flour
• 1/4 cup quinoa flour
• 1/4 cup amaranth flour
• 1/4 cup brown rice flour
• 1/4 cup powdered cocoa
• 1 tsp ground coffee
• 1/2 tsp baking powder
• pinch of salt

Mix well. In a second bowl or measuring cup, mix:

• 2 eggs
• 1/4 cup milk
• 1/2 tsp vanilla extract

Pour the wet ingredients onto the dry ingredients and mix by hand until evenly moist.

We use the "quick bread" and "dark" settings on our Breadman TR2500BC bread machine, which kneads on-and-off for 11 minutes and then bakes for 89 minutes.
