Snacking Brownie
This is our mostly-healthy brownie recipe for when teen boys need afternoon snacks. Lots of eggs and nuts!
Oil a 9 inch by 13 inch pan.
Preheat the oven to 350 degrees
Mix together:
- 6 eggs
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup white sugar
- 1/2 cup teff flour
- 1/2 cup powdered cocoa
- 1 cup almond flour
- 1 1/2 cup chopped walnuts
- 12 squares of Trader Joe's 70% chocolate bar (5.5 ounces) chopped
- 1/2 cup olive oil
Bake for about 25 minutes.
