A local grocery store chain named Market of Choice makes chocolate puddle cookies in its bakeries but calls them "chocolate chewies".
Here is our version of that recipe, which does not puddle and has more "nutty dark chocolate bar" flavor with a higher ratio of nuts and cocoa to the powdered sugar and eggs.
Preheat oven to 320 degrees.

Then toast the chopped walnuts in the oven for 10 to 12 minutes, depending upon how noticeable you want the toasted flavor.
While they are toasting, prepare two bowls of ingredients.

First mix the toasted walnuts into the large bowl. Then add the liquid and mix again. (Mixing twice gives the toasted walnuts another moment to cool before touching the egg whites.)
Use a 2-tablespoon cookie scoop to make balls on a Silpat on a baking sheet. Makes 30 cookies: two baking sheets each with 15 cookies .
Bake for 15 minutes. The tops will get glossy and cracked.
Allow to dry on the baking sheet for several minutes so they do not stick or stretch when removing.
