Coconut Milk Chocolate Ice Cream
In a medium saucepan whisk together:
- 1 egg, whisked
- 10 oz of dark chocolate (we use 10 squares of Trader Joe's 70% Dark Pound Plus)
- 1 can TJ's organic lite coconut milk
- 1 cup heavy cream
- 1/4 cup honey
- 1 1/2 tsp tapioca flour
- 1/4 tsp salt
Remove from heat. Add:
- 2 tsp mint extract
- 1 tsp vanilla extract
Whisk again until smooth. Let cool on the counter for a few minutes. Put in the freezer for a couple hours, to make life easy for the ice cream maker.
