Fruity Philadelphia Style Ice Cream

We adapted our vanilla Philadelphia Style Ice Cream recipe to have fruit.

In a blender combine:

• 1 cup skim milk
• 1 cup heavy cream
• 1 1/4 cup fruit (or 1 cup purée)
• 1/4 cup (scant) honey
• 2 tsp vanilla
• 1 tsp almond extract
• 1 tsp rose water
• 1/8 tsp salt
• 1/8 tsp xanthan gum

The brand of vanilla you use is important. Most vanilla extract is in an alcohol base, which gives the ice cream a funny aftertaste. If you can find vanilla without alcohol (for example, at Trader Joe's) it is well worth it.

Blend. Pour into your ice cream maker. After about 20 minutes, enjoy!

Makes 1 quart.
