Blueberry Muffins

The original recipe is from The Enchanted Broccoli Forest. We're still working on adjusting it.

Preheat oven to 375 degrees.

In a two-cup pyrex measuring cup, melt:

Then add and heat:

Then finish the liquid ingredients by adding:

(Stir while adding the egg to prevent making egg drop soup.)

The dry ingredients are next. In a medium size mixing bowl, combine:

Mix. Then add the wet ingredients to the dry ingredients and mix again. Then add:

For us, silicon muffin liners work just as well as paper muffin liners. It matters not if we oil them, nor whether they are placed in a muffin tray.

Bake for 25 minutes. The muffins become brown on top and a cake tester comes out clean.
