Apple Skillet Pancake

This is a pancake that you bake in the oven. It is fun and poofy! Try making a one-and-one-third size recipe for generous portions. The pancake deflates if not eaten promptly; leftovers taste as good but do not look as nifty.

Begin by preparing:

Preheat oven to 450 degrees.

Take out a seasoned, 12-inch, cast-iron skillet. On the stove (medium heat) melt

While the apples are cooking, put in a blender:

Blend until smooth. Stir the apples occasionally. Once the apples are soft, pour the mixer's batter over the apples and transfer the skillet to the oven. Bake 15 to 20 minutes, until the pancake is puffed and golden.
