This is a pancake that you bake in the oven. It is fun and poofy! Try making a one-and-one-third size recipe for generous portions. The pancake deflates if not eaten promptly; leftovers taste as good but do not look as nifty.
Preheat oven to 450 degrees.
Take out a seasoned, 12-inch, cast-iron skillet. On the stove (medium heat) melt
To the melted butter, add:
Cook for 3-5 minutes, stirring 3 times. Blueberries will thaw.
While the blueberries are thawing, put in a blender:
Blend until smooth. When blueberries are warm, pour the mixer's batter over the blueberries and transfer the skillet to the oven. Bake about 15 minutes, until the pancake is puffed and golden. Dust with powdered sugar and serve immediately.
