This is a pancake that you bake in the oven. It is fun and poofy! Try making a one-and-one-third size recipe for generous portions. The pancake deflates if not eaten promptly; leftovers taste as good but do not look as nifty.
Preheat oven to 450 degrees.
Take out a seasoned, 12-inch, cast-iron skillet. On the stove (medium heat) melt
To the melted butter, add:
Cook for 3-5 minutes, stirring 3 times. Blueberries will thaw.
While the blueberries are thawing, put in a blender:
Blend until smooth. Once the blueberries are warm, pour the mixer's batter over the blueberries, stir a little, then transfer the skillet to the oven. Bake about 15 minutes, until the pancake is puffed and golden. Dust with powdered sugar and serve immediately.
