Mint Chocolate Pancakes
The world has few perfect recipes. But this is one of them.
I make this almost every morning for my kids to eat as breakfast or take as a school lunch.
Add to a blender:
- 4 eggs
- 1 cup milk
- 1/4 cup olive oil
- 2/3 cup teff flour
- 2/3 cup quinoa, sorghum, millet, or amaranth flour
- 1/3 cup tapioca flour
- 1/3 cup sugar
- 1/3 cup chocolate chips
- 1/3 cup unsweetened cocoa powder
- 1/3 cup frozen spinach (optional, we include when feeding kids)
- 2 tsp baking powder
- 1 tsp ground coffee
- 1 tsp vanilla
- 1 tsp peppermint extract (orange extract works great too!)
- 1/4 tsp salt
- 1/4 tsp cinnamon
Blend until smooth. Make wonderful pancakes!
