Here is our favorite, easy latke recipe.
This recipe uses batch size that fits in a twelve-cup food processor for easier stirring.
In a food processor the the upper grating disk to shred:
Transfer the shredded vegetables into a bowl for a moment.
Remove the food processor's upper grating disk, and put in the lower slicing blade. Then put into the food processor:
Pulse the food processor a few times until everything looks eggy.
Pour everything into the other bowl, and stir by hand until the longer and shorter shreds are well mixed.
Use a skillet on medium heat (350 degrees for our electric griddle) to cook the latkes until brown on each side (about 4 minutes per side).
Note: we have also seen a version of latkes that included some bullion, but never tried that. Sounds interesting
