This is my favorite version of our normal blender pancake recipe.
Turn on the stove to medium heat, and get a frying pan that heats evenly. (Medium-low heat is sufficient with a cast iron skillet.)
In a blender make the batter:
Blend well. Then make and enjoy your pancakes!
Note that this recipe contains neither gluten nor leavening, and thus fits Sephardic customs for Passover food.
Half Recipe
In a blender make the batter:
- 3 eggs
- 2/3 cup teff flour
- 2/3 cup quinoa flour (or more teff flour, or a flour mix)
- 2/3 cup frozen spinach
- 1/3 cup dried cranberries
- 1/3 cup coconut milk (we use the Trader Joe's lowfat kind)
- 1/3 cup pineapple juice (we use the juice from canned pineapple)
- some salt, vanilla, and cinnamon
Blend well. Then make and enjoy your pancakes!
