Peanut Butter Cookies

This recipe needs the right peanut butter. We currently use the Adams 100% Natural Crunchy sold at Costco in a container so large it needs stirring with a handheld eggbeater (use only one beater) when first opened to evenly mix the oil.

Preheat oven to 350 degrees.

In a large bowl (or electric mixer's bowl) combine:

• 3 whole eggs
• 1/2 cup (1 stick) softened butter
• 1/2 cup white sugar
• 1/2 cup brown sugar
• 1/2 cup olive oil
• 1 tsp vanilla
• 15 ounces peanut butter (a bit less than 2 cups)

Mix well, then add:

• 1 cup teff flour (adjust based on how oily your peanut butter is)
• 1 1/2 cups chocolate chips
• 2 tsp baking powder
• 1/2 tsp salt

Mix again. Bake on a greased cookie sheet (or cookie sheet with a silicon mat) for 14-15 minutes, until the bottoms begin to brown.
