Our other vanilla ice cream recipe makes nicer ice cream, but requires using the stove. This is so quick to make that when friends with kids visit we can make it and eat it within half an hour. The original recipe was from The Perfect Scoop by David Lebovitz; to be more kid-friendly we have halved the sugar, increased the vanilla, and doubled the xanthan gum and salt.
In a blender combine:
The brand of vanilla you use is important. Most vanilla extract is in an alcohol base, which gives the ice cream a funny aftertaste. If you can find vanilla without alcohol (for example, at Trader Joe's) it is well worth it.
Blend. Pour into your ice cream maker. After about 20 minutes, enjoy!
