Su is the flavored rice used in sushi.
In a Pyrex measuring cup combine:
If possible use fresh herbs, but dried also works. Let the herbs soak for a while, at least as long as it takes to rinse and cook:
When the rice is done, do not take it out of the rice cooker or pot immediately. First add to the vinegar mixture:
Microwave the vinegar mixutre for 80 seconds, so the sugar and salt will dissolve when stirred. Optional but very traditional is to stir into the vinegar mixture:
Fluff the rice and dump it into a ceramic bowl. Fold the liquid mixture into the rice with a wooden spatula or plastic rice spatula. The goal is to get each grain of rice coated with the mixture. Then cover the bowl with a moist towel and let the su cool.
