Home-made corn tortillas are a treat. The addition of some quinoa flour helps texture and gives the health benefits of quinoa's complete protien.
Preheat an electric griddle to 450 degrees. Use plastic wrap to make a liner for the tortilla press.
In a large mixing bowl combine:
Mix well by hand, kneading.
Flatten balls of dough in the tortilla press, then cook them on the griddle for about 1 minute per side (until edges begin to lift off the griddle, and until spots barely start to form).
