Applesauce-Cranberry Cookies
Preheat oven to 350 degrees.
In one bowl mix the "wet" ingredients and spices:
- 1 egg
- 1/2 cup vanilla non-fat yogurt
- 1/4 cup canola oil
- 1/2 cup honey
- 3/4 cup brown sugar
- 2 1/2 cups unsweetened applesauce (one 24-oz jar)
- 1 tsp vanilla extract
- 1 tsp each of ground cinnamon, allspice, cloves, and nutmeg
After mixing the "wet" ingredients, on top add the "dry" ingredients:
- 4 3/4 cup gluten-free flour mix
- 1 1/2 tsp xanthan gum
- 1 tsp baking soda
- 1 1/2 cup chocolate chips
- 1 1/2 cup dried cranberries
Mix the "dry" ingredients, then mix all the ingredients together. The dough will look very wet.
Bake for 17 minutes.
