We experimented with changing a three-ingredient walnut cookie named Dolci di Noci to use almond meal. The result is this very easy almond cookie!
• If you use 2 eggs and no water the cookies are softer and flatter.
• If you use 1 egg and the 1 1/2 tsp water the cookies are round and slightly crunchy (as in the photo).
• If you use 1 egg and no water the cookies are dry like biscotti.
Preheat oven to 350 degrees.

Mix everything together, first with a fork and then by kneading.
Use a 1-tablespoon cookie scoop to make balls on a Silpat on a baking sheet.
Bake for 12-15 minutes.
