This recipe is adapted from The New Vegetarian Epicure by Anna Thomas
This is a very easy bread to make, but not as flavorful as our other breads. It is so moist that the inside has lots of air pockets. Those qualities make it an ideal bread to use when making stuffing.
In an electric mixer's bowl combine:
Mix the dry ingredients together. Then add:
The batter should be too wet to knead.
Fill three loaf pans one-third full.
Let rise for 1 hour in a warm place, such as an oven preheated to 150 degrees.
Bake at 375 degrees for about 1 hour, first checking at 45 minutes.
Remove from pan and thump the bottom to test if done.
