dark chocolate brownie

This is our dark chocolate brownie recipe, perfect for an evening dessert with vanilla ice cream.

Oil a 9 inch by 13 inch pan.

Preheat the oven to 400 degrees

Mix together:

• 3 eggs
• 1/2 cup (1 stick) softened butter (we microwave 22 seconds, then 11 seconds)
• 10 squares of Trader Joe's 70% chocolate bar (4.5 ounces)
• 1 tsp ground coffee
• 2 tsp vanilla extract
• 1 1/2 cups white sugar
• 1/3 cup teff flour
• 1/3 cup chocolate chips
• 1/3 cup powdered cocoa (see note below)
• 1/3 cup almond flour
• 1/4 tsp salt

Try comparing normal cocoa and dutch processed (alkalized). Which do you like better?

Mix well. Bake for 15 minutes. The center will be soft when removed from the oven, but will firm up.
