A double batch of this recipe from The Daring Gourmet fits our larger size spice bottles. We make one substitution, and buy our spices locally from Mountain Rose Herbs.
Using freshly ground spices whenever possible is the key!
Measure out and weigh:
(Don't try grinding cloves yourself. That clogs up a spice grinder! The ginger, of course, would be moist if freshly ground. The cardamom is difficult to get fine enough if you grind it yourself and is almost as flavorful when purchased pre-ground.)
Make sure the spice grinder (or coffee grinded dedicated to spices) is clean from previous use by grinding white rice if needed, and then grind:
With a nutmeg grater, grind:
Stir everything together and you have a lebkuchengewüerz spice mix!
