Orange Bar Cookie

These are experimental, from when the kids were really into lemon and orange extract.

Preheat the oven to 350 degrees.

Start by preparing:

• 3 oranges

To get the oranges ready for the blender, cut off most of the peel with a knife. Try to keep as much of the white pith as you can. No need to remove absolutely all the peel. Then quarter the oranges and remove any obvious seeds.

Second, combine in a blender:

• those prepared oranges
• 2 eggs
• 1 sticks (1/2 cup) of softened butter
• 6 ounces (1/2 can) evaporated milk
• 1/2 cup yogurt
• 1/2 tsp vanilla extract
• 1/2 tsp orange extract

Combine in a mixing bowl:

• 2 cups teff flour
• 1 1/2 cup tapioca flour
• 1/2 cup white sugar
• 1/2 cup brown sugar
• 1 tsp baking powder
• 1/2 tsp salt

Add the liquid into the mixing bowl. Mix well.

Bake for 50 minutes.

While it bakes, make a chocolate mock-ganache (fake because it lacks cream) to pour over the top after the bar cookie has finished baking and cooled.

In a saucepan on medium heat, combine:

• 9 ounces (20 squares) of Trader Joe's 72% dark "pound plus" chocolate
• 1 stick (1/2 cup) butter
• 6 ounces (1/2 can) evaporated milk
