Lots of people use spiralized or shredded zucchini instead of pasta. What if zucchini could also replace pizza crust?
This recipe is in development. It works okay, but could be better.
Preheat oven to 350 degrees.
In an small bowl combine and mix well:
Divide this mixture into two equal halves.
Then open:
And also divide the cheese into two equal halves.
Spiralize or grate:
(Sometimes we use previously prepared frozen spiralize or grated zucchini. When we do this, first add some salt, let it sit, and drain off any liquid.)
In a medium bowl, scramble:
In a large bowl, mix together:
Stirring after adding each ingredient, add the zucchini, eggs, and one each of the portioned-out cheese amounts and basil and olive oil mixture amounts.
Mix until no zucchini clumps remain.
Prepare a half-sheet pan with a silpat. Oil the edge of the pan.
Bake for 30 minutes.
Remove the crust briefly, to spread on top:
Bake for 15 more minutes.
